With the weather considerably colder I always opt for soup or pasta for lunch, I love soups because they don’t feel too heavy and they really warm you up. I really love checking out recipes from those on diets such as Slimming World or Weight Watchers simply because I know everything in the soup is going to be good for you and you can have as much as you want.. within reason.
Today I want to share with you a recipe I threw together, I’m not really one for crazy complicated recipes and I also thought it would be a good challenge to See what I had in my cupboard/freezer to see if I could put something together and I think I did pretty well. All I needed to do for this delicious creation was put a tin of baby potatoes into the blender with some chopped tomatoes, I then added some onion and frozen veg and simply popped the lid on and pressed the blend button, it was surprisingly super quick to blend. Once I got it to the consistency I was happy with I added around 500ml of vegetable stock and blended again, I then turned the timer on to heat the soup for around 60 minutes. At first I was a little unsure if the soup was actually heating but I then realised a blue light was on and it was heating, once the time was done all was ready to plate up straight away. I made some garlic bread to accompany my meal and there we go.
I popped the soup into a small bowl and added some Philadelphia, salt and pepper then it was ready to demolish. I have to say this was so simple to create and If I didn’t have the soup maker I don’t think I would have attempted it, being a mum on the go I rarely have time to faff around and you all know I’m pretty lazy when it comes to cooking so if your like me and like something that’s easy to use and pretty much fool proof I’d check out the Tower Soup Maker from Tower Housewares!
